Process Behind "KAMEDA Kaki-no-Tane"

Process Behind KAMEDA Kaki-no-Tane : Step 1

Grind rice into flour, then steam at high temperatures and knead well into dough. Approx. 300kg of dough can be handled in a single process.

Process Behind KAMEDA Kaki-no-Tane : Step 2

Air is mixed by rollers with dough. By kneading well into dough, we can get the "KAMEDA Kaki-no-Tane" crispy texture. Afterward, we mold the hot dough into a cylindrical shape with half-moon form and chill well in a refrigerator until it cools down.

Cut the chilled and hard dough into pieces approx. 1.6mm-thick by a high-speed slicer. Approx. 1,500 pieces of Kaki-no-Tane shape dough can be handled in a second.

Dry the Kaki-no-Tane shape dough and make it rest, and then bake the Kaki-no-Tane shape dough at temper-atures of between 200 and 300 °C to a beautiful brown.

Pour a soy sauce based seasoning, whose recipe is traditionally and secretly reserved in KAMEDA SEIKA, on the Kaki-no-Tane. Create a consistent seasoning and add luster by rotating the Kaki-no-Tane.

All processes are completed by packaging Kaki-no-Tane with nitrogen gas to prevent peanuts from being oxidized.

Process Behind Happy Turn : Step 1

Grind rice into flour, then steam at high temperatures and knead well into dough. Then, add a little bit of sticky rice to create a crunchy texture.

Stretch the dough by rollers, make it thinner, and cut the dough into the "Happy Turn" shape with mold. Then, dry the Happy Turn shape dough well enough to take out moisture.

Bake the dried Happy Turn shape dough in an oven to a beautiful brown.
